Are there health benefits in becoming a vegetarian? What makes some fats \u2013 like the trans and saturated kinds \u2013 <a href=\"http:\/\/www.health.harvard.edu\/staying-healthy\/the-truth-about-fats-bad-and-good\">an unhealthy choice<\/a>, while other fats are considered an essential part of healthy eating?<\/p>\n\n<p class=\"wp-block-paragraph\">With a <a href=\"http:\/\/www.nytimes.com\/2016\/08\/11\/upshot\/were-so-confused-the-problems-with-food-and-exercise-studies.html?rref=collection%2Fbyline%2Fgina-kolata&amp;action=click&amp;contentCollection=undefined&amp;region=stream&amp;module=stream_unit&amp;version=latest&amp;contentPlacement=5&amp;pgtype=collection&amp;_r=0\">dizzying number of research studies and news stories<\/a> about healthy eating, a key question arises: Are people able to make sense of these studies or does conflicting research lead to more confusion and even distrust?<\/p>\n\n<p class=\"wp-block-paragraph\">A new <a href=\"https:\/\/alpha.pewresearch.org\/pewresearch-org\/internet\/2016\/12\/01\/the-new-food-fights\/\">Pew Research Center survey<\/a> asked Americans a series of questions about their exposure to news about the health effects of food and found that, while a majority of Americans at least sometimes <a href=\"https:\/\/alpha.pewresearch.org\/pewresearch-org\/internet\/2016\/12\/01\/public-views-about-americans-eating-habits\/\">encounter conflicting news stories<\/a> about this topic, most people see it as a sign of continued progress in food science. But how Americans make sense of conflicting food studies in the news depends on their own knowledge of science.<\/p>\n\n<p class=\"wp-block-paragraph\"><!--more-->Three-in-five U.S. adults (61%) say \u201cnew research is constantly improving our understanding about the health effects of what people eat and drink, so it makes sense that these findings conflict with prior studies.\u201d By comparison, a sizable minority (37%) agrees with the statement that \u201cresearch about the health effects of what people eat and drink cannot really be trusted because so many studies conflict with each other.\u201d<\/p>\n\n<p class=\"wp-block-paragraph\">Americans with lower levels of science knowledge (based on <a href=\"https:\/\/alpha.pewresearch.org\/pewresearch-org\/internet\/2016\/10\/04\/public-knowledge-about-science-has-a-limited-tie-to-peoples-beliefs-about-climate-change-and-climate-scientists\/\">a nine-item index<\/a>) are closely divided in their views of food science studies with findings that contradict prior research. Half of those with low science knowledge say food research cannot be trusted because many studies conflict; 46% see the contradictory studies as a sign of progress in scientific understanding. By comparison, 74% of those with high science knowledge say the contradictory studies in the news make sense because new research is constantly improving understanding.<\/p>\n\n<p class=\"wp-block-paragraph\">Despite the varying findings of food studies in the news, most Americans also say they have a handle on what constitutes a healthy diet, but this too varies by science knowledge. About seven-in-ten U.S. adults (72%) say that even though new studies sometimes conflict with prior findings, \u201cthe core ideas about how to eat healthy are pretty well understood.\u201d A smaller share (25%) feels overwhelmed by the inconsistent findings, saying, \u201cIt is difficult to know how to eat healthy because there is so much conflicting information.\u201d<\/p>\n\n<p class=\"wp-block-paragraph\">While a vast majority (92%) of those with high science knowledge say they understand the core principles of healthy eating, people with low science knowledge are closely divided on this. Among those with low scientific knowledge, 50% say the core ideas of healthy eating are pretty well understood, while a similar share (47%) say it\u2019s difficult to know what to eat because of
